Christi’s Indian Curry
(Lamb, Chicken, or Beef will work)

In a frying pan put in three chopped onions, and some fresh garlic, and fry slowly in a bit of olive oil, add about 4 tablespoons of your favorite curry powder.

At the same time you are doing the above, slowly fry your meat in a bit of olive oil in a different pan, add some fresh garlic to this also. Cover the pan and fry it slowly so it will be very tender.

Put the cooked onions in a big saucepan and add diced carrots, potatoes, one apple, zucchini or courgette and a handful of raisins. When these get tender add in the meat, a diced raw tomato a tablespoon of ketchup. When it is all tender serve over steamed white rice.

Garnish with chopped tomatoes, onions, green peppers, bananas, pineapples, mangoes or whatever. Also it is good to have some chutney on hand.
